Our Favorite Pancakes

"Mom, can we have pancakes for breakfast?" I hear this question often.

We love pancakes. Sometimes, I make them small and use them for dipping into hot syrup combined with melted butter. Faithful husband and some of the kiddos enjoy them stacked with butter, while others want them smothered with peanut butter. The very best pancake is one that is sprinkled with coconut and pecans before flipping to cook the second side. YUM! I also like them with a shmear of peanut butter and topped with sliced bananas. The possiblities are endless.

Quick and Easy Pancakes

Ingredients:

2 cups flour
1/4 cup white sugar
1/4 cup baking powder
2 t. salt
2 eggs, beaten
2 cups milk
1/4 cup applesauce

In a large bowl, mix flour, sugar, baking powder, and salt. Make a well in the center and pour in the milk, egg, and applesauce. Mix until smooth. Heat a lightly oiled griddle over medium-high heat. Scoop approximately 1/4 cup for each pancake, brown on both sides, and serve hot. Enjoy!

Sweet nephew typically likes peanut butter, but today requested butter.
